This Typica Wave Fermented Honey opens with a clear honey sweetness, pure and enveloping. The prune adds an elegant depth, almost velvety, while a precise lemon structures the whole with a luminous tension.

The mouthfeel is satiny, perfectly balanced between natural sweetness and lively freshness. The finish is long, clean, subtly persistent.

His work on traditional varieties like Typica aims to reveal their purest potential, through a fine mastery of fermentations and drying phases. Each batch is observed, adjusted, and stabilized with scientific rigor.

Origin

Finca Soledad is located in Ecuador, at high altitude, in a volcanic environment with marked thermal amplitudes. These conditions slow down the maturation of the cherries and promote a natural concentration of sugars and acids.


The Typica is processed using Wave Fermented Honey, with fermentation in a sealed tank using indigenous yeasts, followed by slow and controlled drying. Dehydration in a dark chamber preserves the aromatic integrity and ensures uniform moisture of the bean.

This precise protocol highlights the natural finesse of the Typica, emphasizing clarity and structure rather than exuberance.
