Roasting
Great coffee begins with a rigorous selection of beans, but it’s during roasting that everything comes together. Each coffee is worked to reveal the full aromatic richness of its terroir, striking the perfect balance between sweetness, strength, and complexity. There’s no room for shortcuts – nor for burning the beans.
The goal? To preserve the essence of the coffee, reduce environmental impact, and offer a unique experience in every cup. That’s why our roasting is carried out in an artisanal and responsible manner, using a Loring S15 Falcon, one of the most efficient and eco-friendly machines on the market.

Our Roasting Process
Every coffee has a unique identity, and our approach is all about revealing its character by finding the perfect balance between acidity, sweetness, and aromatic complexity. We never mask the flavors with an overdone roast: we avoid overcooking or smoky notes that could diminish the bean’s natural richness. Each batch is roasted to order, with profiles adjusted to the specific characteristics of the coffee.
We follow an omni-roast approach, meaning our coffees are designed to work equally well for both espresso and filter methods. This flexibility lets you explore the entire aromatic palette of each origin without imposing rigidity on the preparation. Precision, freshness, and traceability guide every step, ensuring a coffee that is as flavorful as it is meaningful.
Why Choose Our Coffee?
Great coffee isn’t just about taste—it’s also about making the right choice. Every bean we roast comes from a rigorous selection, prioritizing Bio & Fairtrade coffees sourced directly from committed producers. Our artisanal, small-batch roasting guarantees optimal freshness and a perfectly controlled flavor profile.
Beyond quality, it’s also a responsible approach: an ultra-efficient roasting process that reduces our carbon footprint, compostable packaging, and complete transparency about the origin of our coffees. Choosing the right coffee means making a positive impact – for yourself, for the producers, and for the planet.
