At Chronic., our coffees are roasted every day. We always try to send you coffees after a short resting period — but sometimes, victims of our own success, they can arrive very fresh.

After roasting, coffee evolves naturally. It gradually releases the carbon dioxide it has built up, allowing the cup to find its balance. Notes that are too bright or sharp mellow out, making way for more precision, sweetness and complexity.
Letting coffee rest means giving it the time to fully express itself.

We recommend a minimum rest of 15 days after roasting. For our seasonal and exceptional coffees, the ideal tasting window generally falls between 3 and 6 weeks after roasting..

The Idido washing station works closely with experienced producers and fermentation specialists to craft coffees of outstanding precision. This lot was fermented with selected yeasts, allowing for controlled sugar transformation and a vibrant aromatic range.

Orange and passion fruit notes merge with the smoothness of chocolate and the subtle tartness of cranberry, creating a full, energetic and perfectly balanced cup — a true tribute to Ethiopian excellence.

The result is a coffee that is bright, finely structured, and refreshingly fruity — among the most refined in Ethiopia.
