After roasting, coffee evolves naturally. It gradually releases the carbon dioxide it has built up, allowing the cup to find its balance. Notes that are too bright or sharp mellow out, making way for more precision, sweetness and complexity.
Letting coffee rest means giving it the time to fully express itself.

We recommend a minimum rest of 15 days after roasting. For our seasonal and exceptional coffees, the ideal tasting window generally falls between 3 and 6 weeks after roasting..

At the head of the Los Aguacates farm, perched in the highlands of Tolima, Luis Ernesto Nieto embodies a new generation of Colombian producers who combine tradition and innovation. Passionate about coffee from an early age, he chose to specialize in demanding processing methods such as White Honey, where every step – from cherry selection to partial fermentation and drying – requires extreme precision.

Luis Ernesto places great importance on quality: all harvests are carried out by hand, only with perfectly ripe cherries, then processed in micro-lots. This artisanal approach allows him to express the unique potential of his terroir, producing coffees that are bright, elegant, and always marked by natural sweetness and refined aromatic complexity.

Today, his coffees are recognized beyond Colombia’s borders and captivate specialty coffee enthusiasts for their balance and distinctive character. Through his work, Luis Ernesto Nieto is establishing Los Aguacates as a rising reference in Tolima and contributing to strengthening Colombia’s reputation as one of the world’s cradles of specialty coffee.

A terroir, an identity

COLOMBIA, TOLIMA

Located in the heart of the Andes mountain range, the Tolima region is one of Colombia’s hidden gems. Still preserved from large-scale industrial production, it captivates with the authenticity of its landscapes: steep mountains, fertile valleys, and unique microclimates. Coffee trees grow here between 1,600 and 2,000 meters above sea level, nurtured by sunny days, cool nights, and regular rainfall that encourages slow and even cherry maturation.

The volcanic soils, rich in minerals, provide incomparable aromatic density. Added to this is an intact biodiversity, where forests, rivers, and plantations coexist in balance. This unique combination of terroir and climate gives rise to coffees of great elegance, renowned for their natural balance, sweet smoothness, and bright, lively acidity.

Today, Tolima stands out as one of the leading regions of Colombian specialty coffee, driven by passionate producers like Luis Ernesto Nieto, who carry on an artisanal and respectful agricultural tradition.
