Meet the Producer
At the head of the Zarza farm, Jhonatan Gasca stands out as one of the most talented young producers in Huila. With a visionary approach and a deep passion for specialty coffee, he transforms each harvest into a true artisanal creation.
For Jhonatan, nothing is left to chance: careful selection of cherries at peak ripeness, experimentation with processing methods, controlled drying, and constant quality monitoring. His goal is clear: to produce coffees capable of competing with the world’s finest lots.
The result lives up to the ambition: explosive, elegant coffees of rare intensity, where technical precision meets bold creativity. Thanks to his work, the Zarza farm has become synonymous with distinctive coffees, sought after by enthusiasts and demanding baristas around the globe.

Origin
In the heart of the Huila department, the Zarza farm rises on fertile slopes where altitudes exceed 1,600 meters. This Colombian region benefits from a privileged climate: bright days, cool nights, and regular rainfall that paces the slow maturation of the cherries. This sharp thermal contrast allows aromas to concentrate and gives the coffees a rare elegance.
The volcanic soils, rich in minerals, nourish the coffee trees and provide them with a unique aromatic complexity. At Zarza, each plot is cultivated with artisanal precision: cherries are hand-picked at optimal ripeness, followed by natural drying and carefully managed fermentation. This meticulous expertise reveals the full richness of the Geisha variety, whose fruity and floral profiles are magnified by the natural process.
The result: a vibrant, intensely aromatic coffee, where floral finesse meets tropical liveliness, reminiscent of passion fruit, orange, and lime. A terroir and a producer that position Huila among the most prestigious specialty coffee regions in Colombia.
