Fermentation is the magic that transforms a simple coffee bean into a burst of flavors. In simple terms, it's the action of microorganisms (like yeasts and bacteria) that "feed" on the sugars and mucilage surrounding the beans, creating new aromas and altering the structure of the bean. It's a bit like the fermentation of wine or bread — but with coffee beans!

Why is fermentation so important?

Imagine a chef seasoning a dish. Fermentation is the seasoning of coffee! It can enhance sweetness, acidity, fruity, floral, or even chocolatey notes. Without it, coffee would taste flat and uninteresting.

The traditional fermentation methods

1. Washed (or wet) process

This is probably the most common and controlled method.

  • Process: After harvest, the coffee cherries are depulped (skin and part of the pulp are removed). The beans are then placed in large water tanks where they ferment for 12 to 48 hours. The water helps regulate temperature and standardize the process. Once fermentation is complete, the beans are washed to remove the remaining mucilage.

  • Result: Washed coffees are often known for their cleanliness, bright acidity, and clear, distinct aromas.

2. Natural (or dry) process

One of the oldest methods, widely used in regions where water is scarce.

  • Process: Coffee cherries are dried whole, with skin and pulp intact, on raised beds or patios. The sugars and mucilage of the fruit infuse into the beans during this long drying process.

  • Result: Natural coffees tend to be fruitier, fuller-bodied, and often sweeter, with notes of berries or tropical fruits.

3. Honey (or semi-washed) process

A hybrid of the first two methods, growing in popularity.

  • Process: Cherries are depulped, but part of the mucilage is deliberately left on the bean before drying. The amount of mucilage left determines the “honey” color (white, yellow, red, black), indicating different levels of mucilage.

  • Result: Honey coffees offer a balanced flavor profile, with good sweetness, clean acidity, and fruity notes.

Funky & innovative fermentations: the new wave!

In recent years, innovative producers have been pushing the boundaries of fermentation, often drawing inspiration from winemaking and other fields. Expect bold and surprising flavors!

1. Anaerobic fermentation (oxygen-free)

  • Process: Coffee cherries (or depulped beans) are placed in sealed tanks, often with a one-way valve that lets carbon dioxide escape while keeping oxygen out. The lack of oxygen forces microorganisms to work differently.

  • Result: These coffees can develop unique and intense flavors, such as notes of candied red fruits, wine, spices, or even whisky.

2. Carbonic maceration

Inspired by the wine world (notably Beaujolais Nouveau).

  • Process: Whole cherries are placed in hermetically sealed tanks filled with carbon dioxide. This creates an anaerobic environment and allows intracellular fermentation inside the cherries before yeasts and bacteria take over.

  • Result: Expect coffees with enhanced sweetness, vibrant acidity, and complex notes of tropical fruits or candy.

3. Yeast- and bacteria-inoculated fermentations

  • Process: Producers experiment by inoculating beans with specific strains of yeast or bacteria, similar to techniques used in cheese or beer making.

  • Result: The potential is endless! This can create very precise and controlled flavor profiles, with floral, lactic, or even unique textural notes.
