But let's be clear, we're not talking about any random coffee maker plugged into the wall. A quality Batch Brew machine respects three pillars: water temperature (between 92°C and 96°C), brew time and the even distribution of water over the ground coffee, known as the coffee bed.

Moccamaster or Wilfa Performance: which filter coffee maker to choose?

Both are references. Both are certified by the ECBC (European Coffee Brewing Centre). But they don't play exactly the same game.

How to prepare a perfect batch brew?

Three rules. Nothing more.

Grind freshness. Ground coffee loses its aromas within minutes when exposed to air. For a batch brew that truly shines, grind your beans right before extraction. A quality grinder makes all the difference. Your coffee will go from "not bad" to "incredible" with just one change. The grind size for filter sits between fine salt and powdered sugar. Water quality. Water makes up over 98% of your cup. If your tap water tastes of chlorine or limescale, your coffee will taste the same. Use filtered or still mineral water with low mineralisation. Water temperature also plays a key role: between 92°C and 96°C is the zone for optimal extraction. ECBC-certified machines like the Moccamaster and Wilfa handle this parameter automatically.

The ratio. The golden rule of Batch Brew: approximately 60 grams of coffee per litre of water. This coffee to water ratio is the starting point recommended by the Specialty Coffee Association. Then adjust to your taste. Prefer it stronger? Go up to 65g. Lighter? Drop to 55g. What matters most is consistency. A kitchen scale is all you need to measure each dose precisely.

Why choose filter over espresso?

It's not about "better" or "worse". It's about what you're looking for in your cup.

Filter coffee is all about transparency. Where espresso compresses and concentrates flavours, filter unfolds them. It allows you to perceive acidic, floral and fruity notes that espresso often hides behind its intensity. If you really want to taste the difference between a single origin from Guatemala and a coffee from Peru, filter is where it happens. Paper filter: a small detail that changes everything

An often overlooked point: the choice of paper filter. A quality filter retains oils and fine particles to deliver a clean, clear cup. Cheap filters can leave a papery taste or let too much sediment through.

Always rinse your filter with hot water before adding the ground coffee. This simple step removes the paper taste and preheats the filter basket. Two seconds that make all the difference in the final result.
