Meet the Producer

Jhoan Vergara is part of the new generation of Colombian producers who are shaking up the specialty coffee scene. Based in Huila, he cultivates his plots with incredible precision, an almost instinctive attention to detail, and a passion that is evident from the first sip.

This Pink Bourbon comes from his family farm, where each lot is hand-picked at the perfect moment of ripeness. Jhoan works with a deep artisanal approach, attentive to every fermentation parameter and the quality of the water used. His goal is simple yet demanding, to create coffees that stand out for their smoothness, clarity, and natural elegance.

If this decaf is so good, it's because behind every bean, there is a vision, that of a producer who considers coffee as a rare, precious, and living fruit.

Origin

Acevedo, in the south of the Huila department, is one of those Colombian terroirs where coffee expresses itself with an almost obvious intensity. Nestled between mountains, forests, and changing microclimates, this area benefits from an ideal altitude, rich volcanic soils, and perfectly balanced humidity.

Here, Pink Bourbon finds a tailor-made environment. This rare, naturally aromatic variety thrives in Acevedo's thermal contrasts, producing coffees with remarkable clarity, delicate floral notes, and a lively sweetness.

For this decaffeinated batch, the Swiss Water Process enhances this terroir. Caffeine is gently removed, without solvents, while preserving the purity and aromatic precision unique to Acevedo. The result is a bright, clean cup, true to its origin and surprisingly expressive for a decaf.
